This is what we had on the menu Eggplant Parmesan, Cold Pasta Salad, Italian Bread with antipasto, Panner Tikka Masala, Vege Pilaf, Naan, Cucumber Raita, and Fruit Salad. I discovered that my kids liked Eggplant Parmesan like crazy. It was a fun evening, and it reminded me of the wonderful parties I used to throw before the kids came along and life became unpredictable. My eyes caught the bright purple kohlrabi, I picked up a   few even though they looked a bit overgrown. I wanted to try something   different than the usual simmering them in dal, so I combined both the   leaves and bulb to make this creation.&lt;a href="http://2.bp.blogspot.com/_BV3sXIPrsq8/TKfAkoJWG0I/AAAAAAAABWs/tS1AqpgzOZI/s1600/IMG_2925.JPG"&gt;&lt;img style="display: block; margin: 0px auto 10px; text-align: center; cursor: pointer; width: 400px; height: 300px;" src="http://2.bp.blogspot.com/_BV3sXIPrsq8/TKfAkoJWG0I/AAAAAAAABWs/tS1AqpgzOZI/s400/IMG_2925.JPG" alt="" id="BLOGGER_PHOTO_ID_5523595203477642050" border="0" /&gt;&lt;/a&gt;&lt;div style="text-align: center;"&gt;&lt;div style="text-align: left;"&gt;You can a bit of garam masala about 1/4 tsp at the end along with lemon juice, if you want.&lt;span style="font-style: italic;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;div style="text-align: center;"&gt;&lt;span style="font-style: italic;"&gt;3 small sized kohlrabi peeled, and cut into sticks&lt;/span&gt;&lt;br /&gt;&lt;/div&gt;&lt;/div&gt;&lt;span style="font-style: italic;"&gt;leaves sliced thinly&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1/2 tsp ginger minced&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1/2 tsp garlic minced&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1/2 tsp green chili minced&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;a pinch of turmeric&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1/2 tsp cumin powder&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tsp coriander powder&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;&lt;/span&gt;&lt;span style="font-style: italic;"&gt;1 tsp mustard seeds&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;lemon juice a little bit&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;salt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;oil&lt;/span&gt;&lt;br /&gt;&lt;/div&gt;&lt;ol&gt;&lt;li&gt;Heat the oil in a medium saucepan at medium high heat. When the oil is hot add mustard, ginger, garlic, and green chili fry till the raw smell goes away.&lt;/li&gt;&lt;li&gt;Reduce the heat to a medium and add in the salt, turmeric, coriander powder, and cumin powder, fry but don't burn the spices.&lt;/li&gt;&lt;li&gt;Add kohlrabi and it's leaves with little water and mix well so the vegetable gets coated in the spice well. Cover and cook until they are done and all the water is evaporated. You   either like it or don’t. I am not really crazy about this spiky  looking  vegetable. Yesterday at my local Indian store I couldn’t resist  these  as they looked so fresh and arranged in a fancy tempting way. You can add about 1 tsp of palm sugar if you wish along with the bitter gourd.&lt;span style="font-weight: bold;"&gt;&lt;/span&gt;&lt;span style="font-weight: bold;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;div style="text-align: center;"&gt;&lt;span style="font-style: italic;"&gt;3 cup bitter gourd finely chopped&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;3 cup onion finely chopped&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;3/4 cup grated coconut fresh/dry&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;½ tsp chili powder&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;¼ tsp turmeric&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;7 tbsp oil&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Salt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;To temper:&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tsp mustard seed&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;5 curry leaves&lt;/span&gt;&lt;br /&gt;&lt;/div&gt;1. To   prepare the vegetable, trim the ends and split it lengthwise into   halves and scoop out the seeded part with a spoon,. use the green outer   part of the vegetable.&lt;br /&gt;2. Heat oil in a wok over medium hot. When hot add the mustard   seed and curry leaves. When the seeds splutter, add in the onion and fry   till soft.&lt;br /&gt;3. Stir in the bitter gourd, coconut, chili powder, turmeric and   salt, stir well. Cook the vegetable without covering in medium heat until the   vegetables are soft and cooked. Stir them continuously to ensure the don't burn at the bottom and for even cooking. After it looks fully cooked increase the heat to high and fry till   the vegetables till dry and starts to turn light brown. 4. It has a nice nutty flavor of sesame   seed. Then cool it and powder it finely in a coffee grinder.&lt;/li&gt;&lt;li&gt;Heat oil in a sauce pan over medium high heat, when the oil is hot enough add the tempering spices and fry till mustard seed splutter and the other seeds turn a shade dark.&lt;/li&gt;&lt;li&gt;Add   onion, cook till it turns light brown. Mix in the tomatoes cook till   pulpy. Add salt, turmeric and tamarind paste, fry for 1 minute. She is a really good cook whose specialties are mutton briyani and chili chicken. She literally makes them almost every other day. she invited me for lunch and served this spicy chicken which she had carefully prepared with with Sakthi chicken masala powder, along side of briyani and boiled egg. Since I am not a big fan of Sakthi masala, I came up with my own spice mixture as a substitute. &lt;img id="BLOGGER_PHOTO_ID_5178807269466767378" style="margin: 0px auto 10px; display: block; text-align: center;" alt="chicken masala" src="http://bp0.blogger.com/_BV3sXIPrsq8/R97RxejHABI/AAAAAAAAAGs/x_YO0RtY8QI/s400/4.jpg" border="0" /&gt;This is a very simple fast chicken recipe that I always end up making.   The chicken pieces in this dish have enough masala just clinging to it   and have a very warm spicy taste due to the addition of chili powder and   pepper powder. The green chili and curry leaves are fried with the   chicken at the end to give it a fresh aroma and unbeatable flavor.  You can substitute the spice mix with you favorite curry powder or chicken masala powder or meat masala powder.&lt;em&gt;&lt;br /&gt;&lt;/em&gt;&lt;div style="text-align: center; font-style: italic;"&gt;2 lbs skinless chicken quarter with bone&lt;br /&gt;11/2 cup onion chopped finely&lt;br /&gt;2 tbsp garlic paste&lt;br /&gt;1 tbsp ginger paste&lt;br /&gt;3 cup tomatoes chopped roughly&lt;br /&gt;¼ tsp turmeric&lt;br /&gt;salt&lt;br /&gt;oil&lt;br /&gt;&lt;em&gt;Spice Mix&lt;/em&gt;:&lt;br /&gt;1tbsp coriander powder&lt;br /&gt;¾ tsp chili powder&lt;br /&gt;1 tsp cumin powder&lt;br /&gt;1 tsp aniseed powder&lt;br /&gt;1/2tsp black pepper powder&lt;br /&gt;11/2 tsp garam masala&lt;br /&gt;&lt;em&gt;&lt;span&gt;Herb Mix:&lt;/span&gt;&lt;/em&gt;&lt;br /&gt;&lt;em&gt;&lt;/em&gt;10 juliennes of fresh green chili&lt;br /&gt;10 curry leaves&lt;br /&gt;¼ cup packed coriander leaves chopped&lt;br /&gt;&lt;/div&gt;&lt;ol&gt;&lt;li&gt;Cut the chicken into bite size pieces. Leave the bones in.&lt;/li&gt;&lt;li&gt;Heat oil in a sauce pot over medium hot. When the oil is warm add in onion, fry till they start to brown. Mix the ginger and garlic paste, fry till the raw smell goes away.&lt;/li&gt;&lt;li&gt;Add chicken, tomatoes, turmeric, salt and about ½ cup water. Cook covered till the chicken is well done and the tomatoes are pulpy. Uncover and cook on high until all the water has evaporated and the curry looks like just clinging to   the chicken.&lt;/li&gt;&lt;li&gt;At this stage add the spice mix, fry well in low heat for about 5   minutes. It is the staple bread in all part of India and resembles a whole wheat tortilla.&lt;br /&gt;Chapatis   are made from atta flour, which is a finely milled, low gluten, soft   textured whole wheat flour. You can get this at any Indian grocery   store. The regular whole wheat flour is not suitable for this bread. The   bread should be light textured. For best result knead the dough until   it is really smooth, then let it rest for a while at least for 2 hrs.&lt;br /&gt;&lt;div style="text-align: center;"&gt;2 cup atta flour&lt;br /&gt;21/2 tbsp oil&lt;br /&gt;1 to 11/2 cup boiling water approximately&lt;br /&gt;salt&lt;br /&gt;&lt;ol style="text-align: left;"&gt;&lt;li&gt;Mix in the atta and salt and oil. Gradually add water to form a firm dough. Knead the dough until it is smooth enough but still pliable. Cover with plastic wrap and leave aside for a few hours. Or place it in the fridge until ready to cook.&lt;/li&gt;&lt;li&gt;Divide the dough into 15 balls and roll it with a rolling pin into a thin circle.&lt;/li&gt;&lt;li&gt;Heat   a frying pan and brush with some oil. Kuzhi means hole and   paniyaaram is used to refer anything that is round. So that is what they   are small golden rice dal balls made in the holes of a special pan.   Nice crispy outside but soft spongy inside they can be had for snack as   well as served as an appetizer.They are also made all over the southern India with little variations and known asAppe in Konkani and Paddu in Kartanaka. &lt;/div&gt;To   make these paniyaarams, you need a special kind of mold with holes in   it called paniyaara chatti. You can buy this mold at any Indian grocery   store or online Indian shops, if not use the aebeskiver pa which is used to make Dutch fried pancakes.&lt;br /&gt;&lt;br /&gt;&lt;i&gt;&lt;span style="font-weight: bold;"&gt;&lt;/span&gt;&lt;/i&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;span style="font-style: italic;"&gt;4 cup idli batter&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;2 cup onion finely chopped&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tbsp finely chopped green chili&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tbsp finely chopped curry leaves&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tsp mustard seeds&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;oil&lt;/span&gt;&lt;/div&gt;&lt;ol&gt;&lt;li&gt;Heat oil in a frying pan, add mustard and let it crackle. Traditionally  they are made with thin potato slices, but I substituted  with grated  potatoes for convenience.&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;span style="font-style: italic;"&gt;3 eggs&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 cup onion chopped&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;4 cup thawed, frozen hash brown potatoes&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;½ tsp cumin seeds&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;¼ tsp turmeric&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;¼ tsp chili powder&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tsp chopped coriander leaves&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tsp sliced green chili&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;salt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;oil&lt;/span&gt;&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Heat oil in an large frying pan, add cumin seeds and fry till they turn a shade dark.&lt;/li&gt;&lt;li&gt;Add onion fry till light brown. Mix in turmeric, chili powder, salt. Add   the potatoes and mix well till all the spice powders coat the  potatoes.  Level out the potatoes and sprinkle some water. Cover and  cook gently  till the potatoes are done and the water is almost  evaporated.&lt;/li&gt;&lt;li&gt;Sprinkle the coriander leaves and green chili on top. Do not mix it.&lt;/li&gt;&lt;li&gt;Make three small holes in the potatoes and break the eggs in the holes. During those days when  even a  refrigerator was considered a luxury and station lunch was just a  soggy  poori with some bland potato curry on the side, the only option  left for  us was to carry our own food.&lt;br /&gt;&lt;br /&gt;Well it was not an easy  task to  prepare and pack a meal when you are in a hurry to catch a  train. So  puliyodhara in small banana leaf parcels with some pickles  and papad was  my mom’s quick fix. The reason she choose this over the  other endless  variety is it is easy to prepare, will stand all the  temperature abuse  during the journey and will still maintain its  freshness. She would make  the pulikachal the night before. This is also a  very   famous temple food distributed to the devotees as prasadam.&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;span style="font-style: italic;"&gt;3 cup raw rice&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;salt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;3 tbsp tamarind paste&lt;/span&gt;&lt;br /&gt;&lt;i style="font-style: italic;"&gt;To Temper:&lt;/i&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;3 tbsp oil&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;2 tssp mustard seeds&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tsp cumin seeds&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tsp asafoetida&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;6 curry leaves&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;5 garlic pods sliced&amp;nbsp;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;2 green chili sliced&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;3 tbsp peanut &lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;To Powder:&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;2 tbsp coriander seeds&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;5 dried chilies&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tbsp white sesame seeds&amp;nbsp;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1/2 tsp asafoetida&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1/2 tsp fenugreek seeds&amp;nbsp;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;1 tsp whole black peppercorns&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Cook the rice as per instruction and let it cool, then separate the grains using a fork. Dry roast all the ingredients for the powder and grind it into a fine powder.&lt;/li&gt;&lt;li&gt;Heat oil in a wok as soon as it smokes, add all the tempering ingredients. When the mixture starts to splutter and the peanuts and garlic turn into golden brown, add the tamarind paste along with 1//2 cup water. Let it boil&lt;/li&gt;&lt;li&gt;Add the masala powder and cook until the sauce is thick and oil starts to separate. Fresh seafood is not readily available in his native village expect for a few fresh water stream fish, which is caught by the locals and sold in the market. These fishes have so much bones in them, so eating them ia a bit tricky and a skill that is acquired over time. Alternatively mutton and other meats are most frequently cooked as curries.  On the other hand I lived near the coast area and fish was one of our staple, I can eat them everyday. Mom had a special clay pot that she used to cook fish curry, and the aroma filled the entire house. The best part was the curry tastes even better a day later. When I was a kid the curry was too strong for me, so I just ate the fish with rice and tempered lentils.&lt;br /&gt;But now I and Hubby dear cannot live without this curry. Cook till the mustard splutter and the seeds turn a shade dark.&lt;/li&gt;&lt;li&gt;Add onion and fry till it turns light brown. Add the ginger garlic paste cook till the raw smell goes away.&lt;/li&gt;&lt;li&gt;Add the tomatoes and cook covered till it is all pulpy. With the back of your spoon break them down until it is al crushed and saucy.&lt;/li&gt;&lt;li&gt;Stir in the spice mix, salt and tamarind paste. There are atleast a few dozen   varieties in my pantry, and whenever I have that desire to munch on something   and don't want to spend my whole day in the kitchen, these wafers  come  in handy. I throw a few in the microwave and snack on it with some leftover chutneys or sauces. Papad comes in different flavors, plain, garlic, red   chili, black  pepper, masala, mint, tomato to name a few. These days you can get some  pre-fried mini ones from a well stocked Indian grocery store.It is used    as an accompaniment to an Indian meal, or eaten as an appetizer with    some chutney or yohurt dips. My favorite dips that goes really well  with these crisps are onion raita, cucumber   raita, kachumber and mint  chutney.&lt;br /&gt;During annual fairs in my town papad vendor bring in their big baskets of giant papads, and serve them topped with finely chopped onion, green chili, tomato, cilanto, and chat masala with mint chutney and lemon on the side. These papads were so big to feed one whole family, it was one of my favorite fair food next to banana chili fitters.&lt;br /&gt;&lt;br /&gt;So now how to make a papad&lt;br /&gt;&lt;strong&gt;Fried papad&lt;br /&gt;&lt;/strong&gt;Heat oil in a wok, hold the papad with tong and fry for a few seconds until it crisps up.&lt;br /&gt;Drain it in a paper towel.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Grilled papad&lt;/strong&gt;&lt;br /&gt;Hold   the papad with tongs and roasted over an open gas flame. Keep turning   it frequently to prevent burning. As soon as papad has changed color,   curled up and become crisp, it is done.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Microwave papad&lt;/strong&gt;&lt;br /&gt;Place   a papad in the microwave and cook in high for about 15 to 45 sec   depending on the size and thickness of the papads. It is  influenced by local  produce, spice, religion, and climate. It has  evolved as traders and  invaders introduced new spices and techniques.  Every house has unique  traditional recipes and the same dish goes  though an extensive makeover  when it travels from one region to  another. For example korma curry in  northern India taste and looks  entirely different from the one from  south India. Korma from the northern India has yogurt as it's base sauce flavored with ground almonds, but in the southern part korma literally means anything cooked in a coconut sauce with ground cashew nuts.&lt;br /&gt;&lt;br /&gt;In India all  three course of meal are served at the  same time in a thali or banana  leaf. There is no hard and fast rule to  which dish should be combined  with what, just go with you instinct and  experiment on the way.&lt;br /&gt;&lt;br /&gt;A  typical Indian dinner will consist of an  appetizer, rice and/or bread,  lentils, two or more meat/veggie dishes,  sweet, and accompaniments  like pickle, chutney, salad, fruit, papad.
